Chocolate Strawberry Banana Yogurt Clusters
These chocolate strawberry banana yogurt clusters are my take on the viral TikTok recipe. Made with just 7 simple ingredients, they're easy to make and the perfect healthy dessert to keep stocked in your freezer all summer long!
Ingredients
- 2 cups strawberries chopped
- 1 large banana chopped
- ½ cup Greek yogurt plain, full fat
- 1 Tablespoon honey
- 1 cup dark chocolate chips
- 1 Tablespoon coconut oil
- peanuts for sprinkling, chopped, roasted and salted
Instructions
- Add fruit, yogurt and honey to a large bowl and gently stir until combined.
- Scoop mixture onto a parchment lined baking sheet and place in the freezer for about 1 hour.
- Melt your chocolate chips and coconut oil in 30-second increments in the microwave or using a double boiler.
- Remove the yogurt clusters from the freezer and coat each one in chocolate. PRO TIP: I don’t recommend dipping the clusters into the chocolate, the cold cluster will cause the chocolate to harden and make it very difficult to work with. I learned this the hard way!
- Quickly sprinkle with chopped peanuts before the chocolate hardens.
- Place clusters in the freezer until chocolate has fully hardened and enjoy!
