Chocolate Sugar Cookies

Ingredients

  • 1 ¼ cup unsalted butter softened
  • 1 ½ cups granulated sugar
  • 3 egg room temperature, large yolks
  • 1 egg room temperature, large
  • 1 ½ teaspoons vanilla extract
  • 3 ½ cups all-purpose flour
  • 1 teaspoon salt
  • ¾ teaspoon baking powder
  • ⅔ cup cocoa powder

  1. Preheat the oven to 375 degrees Fahrenheit and line two baking sheets with parchment paper.
  2. In the bowl of a stand mixer fitted with the paddle attachment, add 1 ¼ cup unsalted butter, and 1 ½ cups granulated sugar and beat on medium-high speed until light and fluffy, about 3-4 minutes. Scrape down the sides and bottom of the bowl as needed to ensure the butter and sugar are evenly incorporated.
  3. Add in 3 large egg yolks, 1 large egg, and 1 ½ teaspoons vanilla extract and beat until combined.
  4. In a medium bowl, sift together 3 ½ cups all-purpose flour, 1 teaspoon salt, ¾ teaspoon baking powder, and ⅔ cup cocoa powder. Add the dry ingredients to the wet ingredients and mix on medium-low speed just until they are fully combined. Scrape down the sides and bottom of the bowl as needed, but do not over-mix.
  5. Lightly dust a clean surface with flour and roll out the dough to ¼ inch thick. Cut out your desired shapes and place the cookies on the prepared baking sheets, leaving 1 ½ inches between them. Gather the scraps of dough together and roll out again, repeating until all the dough has been cut out.
  6. Bake for 7-9 minutes, just until the centers of the cookies have lost their sheen and look matte. Remove from the oven and allow the cookies to cool for 2-3 minutes on the baking sheet before transferring them to a cooling rack to finish cooling.
  7. Frost the cooled cookies with buttercream, royal icing, or any other frosting of your choice.
