Ingredients

  • 1 cup flour
  • ½ cup cocoa powder
  • 1 tsp baking soda
  • ½ tsp salt sea salt
  • ¾ cup light brown sugar packed
  • 2 egg at room temperature, large
  • ¼ cup butter melted and cooled, unsalted
  • ¼ cup coconut oil melted and cooled
  • 1 tsp vanilla extract
  • 1 ½ cups zucchini finely shredded, packed
  • 1 cup semisweet chocolate chips divided

Instructions

  1. Preheat the oven to 350 degrees. Coat a 9 x 5 loaf pan with cooking spray.
  2. Combine the flour, cocoa powder, baking soda, and salt together; mix well.
  3. Whisk together the brown sugar, eggs, melted butter, coconut oil, and vanilla extract together until well combined and creamy.
  4. Add the flour mixture to the liquid mixture until combined.
  5. Add the shredded zucchini and 3/4 cup of chocolate chips; mix until just combined.
  6. Pour into the prepared loaf pan.
  7. Sprinkle the remaining chocolate chips over the top of the batter evenly.
  8. Place into the oven and bake for 50-60 minutes, or until a tester inserted in the center comes out clean.
  9. Allow to cool for 10 minutes in the loaf pan before carefully removing it from the pan and allowing it to cool on a wire rack.
  10. Slice and serve with ice-cold milk. Enjoy!
