Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup cocoa powder unsweetened
  • 1 1/4 teaspoons baking soda
  • 1/4 teaspoon salt
  • 2 egg large
  • 1/2 cup vegetable oil
  • 1/2 cup brown sugar packed
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 1/2 cups zucchini packed, shredded
  • 3/4 cup semisweet chocolate chips

Instructions

  1. Preheat the oven to 350°F.
  2. In a medium bowl, whisk together flour, cocoa powder, baking soda, and salt.
  3. In a large bowl, whisk together eggs, oil, brown sugar, granulated sugar, and vanilla extract until smooth.
  4. Add the dry ingredients to the wet ingredients and stir until just combined. Fold in the shredded zucchini and chocolate chips.
  5. Grease a 9x5-inch loaf pan with cooking spray.
  6. Pour the batter into the prepared loaf pan and bake for 50-55 minutes, or until a toothpick inserted into the center comes out clean.
