Chopped Greek Salad
This Chopped Greek Salad comes together in just minutes with a few simple ingredients producing a salad that is crisp, flavorful and pairs well with a variety of meals.
Ingredients
Salad
- 1 English cucumber
- 1 red onion
- 10 ounces grape tomatoes
- ¼ cup kalamata olives
- ¼ cup feta cheese
Dressing
- 3 Tablespoons olive oil
- 3 Tablespoons lemon juice
- 1 teaspoon salt
- ½ teaspoon black pepper
Instructions
- Chop the cucumbers, slice the red onion, halve the grape tomatoes and slice the olives.
- To make the dressing, in a serving bowl, whisk together the olive oil, lemon juice, salt and pepper.
- Add the chopped ingredients to the bowl with the dressing and toss.
- Sprinkle the feta cheese over the salad and serve.
