Ingredients

  • 2 cucumber diced, Persian
  • 1/4 cup Pepperoncini sliced (optional)
  • 1 bell pepper diced (any color, small
  • 2 tomato diced, medium
  • 1/2 cup red onion diced
  • 2/3 cup kalamata olives halved
  • 1/2 cup feta cheese crumbled
  • 1/4 cup extra virgin olive oil
  • 3 tablespoons red wine vinegar
  • 1/2 teaspoon basil dried
  • 1 1/4 teaspoons oregano dried
  • salt to taste

Instructions

    Cup of Yum
  1. Combine all chopped ingredients in a large salad bowl.
  2. Crumble feta cheese over the chopped vegetables.
  3. In a small bowl, whisk together olive oil, red wine vinegar, dried basil, dried oregano, and salt.
  4. Pour the dressing over the salad and toss gently to combine. Adjust salt if needed.
