Chopped Greek Salad
All your favorite Greek flavors (like feta, basil, and oregano) in one bowl!
Ingredients
- 2 cucumber diced, Persian
- 1/4 cup Pepperoncini sliced (optional)
- 1 bell pepper diced (any color, small
- 2 tomato diced, medium
- 1/2 cup red onion diced
- 2/3 cup kalamata olives halved
- 1/2 cup feta cheese crumbled
- 1/4 cup extra virgin olive oil
- 3 tablespoons red wine vinegar
- 1/2 teaspoon basil dried
- 1 1/4 teaspoons oregano dried
- salt to taste
Instructions
- Combine all chopped ingredients in a large salad bowl.
- Crumble feta cheese over the chopped vegetables.
- In a small bowl, whisk together olive oil, red wine vinegar, dried basil, dried oregano, and salt.
- Pour the dressing over the salad and toss gently to combine. Adjust salt if needed.
