Ingredients

  • 6 cups romaine lettuce chopped
  • 1 1/2 cups cherry tomato halved
  • 1 cucumber diced
  • 1/2 red onion finely chopped
  • 1 cup chickpeas rinsed and drained
  • 1/4 cup kalamata olives sliced
  • 5 tablespoons feta cheese crumbled
  • 4 tablespoons extra virgin olive oil
  • 2 1/2 tablespoons red wine vinegar
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon oregano dried
  • salt to taste
  • black pepper to taste
  • 1 to 2 teaspoons honey optional

Instructions

  1. In a large salad bowl, combine the chopped vegetables with chickpeas, olives, and 4 tablespoons crumbled feta cheese.
  2. In a small bowl, whisk together olive oil, red wine vinegar, Dijon mustard, oregano, salt, and pepper. Add honey if using.
  3. Pour the dressing over the salad ingredients and toss well to coat evenly. Sprinkle remaining 1 tablespoon feta cheese on top as garnish.
