Chopped Veggie Slaw with Jalapeño Lime Vinaigrette
Chopped cabbage, peppers, carrots and scallions are tossed with a sweet and spicy jalapeño vinaigrette. This fresh and easy slaw recipe is ideal for entertaining, potlucks, cookouts and more.
Ingredients
- 2 cups green cabbage chopped
- 2 cups red cabbage chopped
- 1 cup carrot shredded
- 1 red bell pepper (seeded and chopped)
- 1 cup scallions diced
- 1 cup cilantro (minced)
Jalapeno Lime Vinaigrette
- 1 lime (zested and juiced)
- 2 tablespoons extra virgin olive oil
- 2 tablespoons jalapeño optional, minced
- 1 clove garlic (minced)
- 1 tablespoon honey
- 1 teaspoon smoked paprika
- 1 teaspoon cumin
- black pepper to taste
- salt to taste
Instructions
- Place all the slaw ingredients in a large bowl; set aside.
- In a medium bowl, whisk together the vinaigrette ingredients. Check for seasoning and adjust accordingly. Drizzle vinaigrette over the slaw and toss well. Season with additional salt and pepper to taste.
