Chorizo Chickpea Stew (Spanish)

Ingredients
- 1 tablespoon olive oil
- 2 cups chorizo (2 smoked sausage, thinly sliced (see notes below))
- 1 small onion (finely diced)
- 4 cloves garlic (minced)
- 1 large Jalapeño (seeds removed)
- 1 tablespoon dried oregano
- 2 teaspoon smoked paprika (or paprika)
- 2 tablespoon chili powder
- 1 bay leaf
- 14 oz canned crushed tomato
- 14 oz canned chickpeas (drained and rinsed)
- 1 cup chicken broth (or vegetable broth)
- ¼ teaspoon salt (or to taste)
- ¼ teaspoon black pepper (or to taste)
Instructions
- In a large frying pan or small pot on medium high heat, add the olive oil and sliced chorizo. Sauté the chorizo for 5-6 minutes or until nicely browned.
- Add in the onion, garlic, jalapeno, oregano, paprika, chili powder and bay leaf. Sauté for 2-3 minute or until the onion is tender.
- Add the crushed tomato, chickpeas, chicken stock, salt and pepper. Stir until evenly combined.
- Bring to a simmer then lower the heat to medium-low and let it simmer for 12-15 minutes uncovered, stirring often, or until the sauce has reduced and thickened.
- Remove the bay leaf.
- Serve and enjoy!

Notes
- Chorizo Notes: if you cannot find smoked chorizo sausage, you may substitute for fresh chorizo sausage. Remove the casings and crumble the sausage meat. Pan fry until cooked through. You may also use a plant based chorizo for a vegetarian and vegan recipe.
