Ingredients
Crust:
- 10 Nature Valley Crunchy Oat and Honey Bars (210g) crushed
- 1/4 cup light butter (56g) melted - I used I can't believe it's not butter light
- 1/4 cup granulated zero calorie sweetener
Cheesecake Layer:
- 8 oz. fat free cream cheese (224g)
- 3/4 cup nonfat Greek yogurt (170g)
- 1/4 cup granulated zero calorie sweetener
- 1 tsp clear vanilla extract optional
- 8 oz lite cool whip (226g)
- 3 Tbsp festive sprinkles (36g)
Instructions
- In a large bowl, stir together crushed granola bars, melted butter and sweetener until well mixed. Press the mixture into a 9x9-inch baking pan that has been generously sprayed with nonstick baking spray.
- In a mixer, beat together the cream cheese, yogurt, sweetener, and vanilla. Add cool whip at the end and beat just enough to combine.
- Spread cream cheese mixture on top of crust. Then place in freezer for 30 minutes to let set. Once set and chilled, take out and top with sprinkles.
- Cut into 12 slices place back in freezer to chill and let set further. When ready to eat, take out and enjoy!

Notes
- I recommend letting sit in freezer for at least an hour before eating. Keep stored in an airtight container in the freezer for up to 3 months.
