CHRISTMAS OOEEY GOOEY BUTTER COOKIES

Ingredients

  • 1 package 8 oz cream cheese, softened
  • ½ cup unsalted butter softened
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 package 15.25 oz yellow cake mix
  • ¼ cup powdered sugar for rolling
  • ¼ cup granulated sugar for dough
  • Pinch of salt

  1. Prepare the dough: In a large mixing bowl, beat together the cream cheese, butter, egg, and vanilla extract until smooth and creamy.
  2. Add the yellow cake mix, granulated sugar, and salt to the mixture and stir until fully combined. The dough will be thick and sticky.
  3. Cover the dough and refrigerate for at least 30 minutes to firm it up and make it easier to handle.
  4. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  5. After chilling, scoop tablespoon-sized portions of dough and roll them into balls.
  6. Roll each ball in powdered sugar until fully coated, then place them on the prepared baking sheet, spacing about 2 inches apart.
  7. Bake for 12-15 minutes, or until the edges are slightly golden, and the centers remain soft.
  8. Allow the cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
