Christmas Rice

Ingredients

  • 3 tablespoons olive oil
  • 1 onion finely chopped or grated
  • 2 cups white rice washed and drained
  • salt to taste
  • 3 cups champagne or sparkling wine
  • 1 cup dried cranberries or white or black raisins
  • 1 cup dried apricots chopped
  • ¼ cup parsley chopped
  • 1 cup slivered almonds

Instructions

  1. Heat a dry skillet over medium-low heat. Add the slivered almonds and stir frequently until they are golden and fragrant, about 2-3 minutes. Remove from the skillet and set aside to cool.
  2. In a medium-sized pot, heat the olive oil over medium heat. Add the chopped onion and sauté until softened.
  3. Stir in the rice and season with salt. Sauté for 2-3 minutes, coating the rice in the oil.
  4. Pour in the champagne and bring to a simmer. Cook uncovered until the liquid has almost evaporated, then reduce the heat to low, cover, and cook until the rice is tender. Turn off the heat.
  5. Gently fold in the raisins, dried apricots, chili peppers, parsley, and toasted almonds. Mix until well combined.
  6. Transfer to a serving dish and enjoy!
