Chunky Monkey Pancakes Recipe

Ingredients

  • ½ cup quick cooking oats
  • 2 large eggs beaten with fork
  • 1½ cups milk
  • ½ tsp vanilla extract
  • 1 banana mashed with fork
  • 1¼ cups whole wheat flour
  • 1½ tsp baking powder
  • ½ tsp salt
  • 1 Tbsp sugar
  • ½ tsp cinnamon
  • ½ cup chocolate chips
  • PAM Cooking Spray to spray on griddle/pan

Instructions

  1. In a small bowl combine the oats with beaten eggs, milk, vanilla, mashed banana and set aside
  2. In a medium sized bowl, combine the whole-wheat flour, baking powder, salt, sugar, and cinnamon, whisk to combine.
  3. Combine the wet, dry ingredients, and chocolate chips, stir with wooden spoon until just combined.
  4. Heat griddle to 350° F or pan to medium-high.(Griddle/pan is ready when drops of water evaporate on contact.)When heated, coat with cooking spray.
  5. Using ¼ cup dry measuring cup, ladle pancake mixture onto hot griddle/pan.
  6. Cook the pancake until edges begin to look “dry”. Flip and cook for about one minute on the other side.
  7. Remove from griddle/pan. Plate.
