CILANTRO-LIME AVOCADO SALSA

Ingredients

  • 2 ripe avocados, pitted and diced
  • ½ cup red onion, finely chopped
  • ½ cup fresh cilantro, chopped
  • ¼ cup fresh lime juice (about 2 limes)
  • 2 jalapeños, seeded and minced (or more, to taste)
  • ½ teaspoon salt, or to taste
  • Optional additions: ½ cup diced tomatoes, ¼ cup corn (fresh, frozen, or canned), 1 clove garlic, minced

  1. Combine ingredients: In a medium bowl, gently combine the diced avocados, red onion, cilantro, lime juice, jalapeños, and salt.
  2. Mix gently: Toss gently to combine all the ingredients. Be careful not to mash the avocados too much.
  3. Taste and adjust: Taste and adjust the seasoning as needed, adding more lime juice, salt, or jalapeño for heat.
  4. Serve: Serve immediately or chill for a short time before serving.

Notes

  • Avocado Ripeness: Use ripe but firm avocados. They should yield slightly to gentle pressure.
  • Lime Juice: Fresh lime juice is essential for the bright flavor of this salsa. Don't use bottled lime juice.
  • Jalapeños: Adjust the amount of jalapeños to your desired level of heat. You can also use other types of peppers, such as serrano peppers.
