Cilantro lime chicken
Juicy chicken thighs are saturated with a fresh herb sauce and loads of seasoning. These get topped off with a bright, zesty salsa.
Ingredients
- 8 chicken thighs skinless and boneless
Sauce
- ½ cup cilantro 20g / 0.7oz
- ⅓ cup parsley 15g / 0.5oz
- 1 anchovy fillet
- 1 tablespoon capers
- 1 garlic chopped, clove
- 1 teaspoon apple cider vinegar
- lime juice from half lime plus zest
- ¼ cup extra virgin olive oil
- black pepper to taste
- salt to taste
- jalapeño chopped, optional, half
Avocado Salsa
- 1 cup cherry tomato
- ¼ red onion finely diced, small
- ½ jalapeño seeds removed + finely chopped
- 2 avocado peeled, cored, and diced
- 1 tablespoon lime
- salt good pinch
- 2 tablespoon Coriander finely chopped
Instructions
- Add all the sauce ingredients to a small blender and blitz until smooth. Adjust seasoning to taste.
- Marinate chicken in half of the sauce, ideally for 30 minutes or overnight.
- Spray a griddle pan with olive oil and heat. Cook for about 5 - 6 minutes on a medium heat on each side or until cooked through.
- Drizzle over rest of sauce to serve.
Salsa
- Dice and remove seeds of tomatoes then mix everything together. Adjust seasoning to taste
- Serve with salsa and optional coconut cilantro rice.
Notes
- Storage - Tupperware in the fridge for 2 days or freezer for 2 months
