Cilantro lime chicken

Juicy chicken thighs are saturated with a fresh herb sauce and loads of seasoning. These get topped off with a bright, zesty salsa.

Ingredients

  • 8 chicken thighs skinless and boneless
Sauce
  • ½ cup cilantro 20g / 0.7oz
  • ⅓ cup parsley 15g / 0.5oz
  • 1 anchovy fillet
  • 1 tablespoon capers
  • 1 garlic chopped, clove
  • 1 teaspoon apple cider vinegar
  • lime juice from half lime plus zest
  • ¼ cup extra virgin olive oil
  • black pepper to taste
  • salt to taste
  • jalapeño chopped, optional, half
Avocado Salsa
  • 1 cup cherry tomato
  • ¼ red onion finely diced, small
  • ½ jalapeño seeds removed + finely chopped
  • 2 avocado peeled, cored, and diced
  • 1 tablespoon lime
  • salt good pinch
  • 2 tablespoon Coriander finely chopped

Instructions

    Cup of Yum
  1. Add all the sauce ingredients to a small blender and blitz until smooth. Adjust seasoning to taste.
  2. Marinate chicken in half of the sauce, ideally for 30 minutes or overnight.
  3. Spray a griddle pan with olive oil and heat. Cook for about 5 - 6 minutes on a medium heat on each side or until cooked through.
  4. Drizzle over rest of sauce to serve.
Salsa
  1. Dice and remove seeds of tomatoes then mix everything together. Adjust seasoning to taste
  2. Serve with salsa and optional coconut cilantro rice.

Notes

  • Storage - Tupperware in the fridge for 2 days or freezer for 2 months
