Ingredients

  • 1 cup of fresh cilantro
  • ¼ cup of fresh lime juice
  • 2½ tbsp olive oil
  • 4 cloves of garlic
  • 2 green onions chopped
  • 1 serrano chile seeded if desired, chopped
  • ¾ tsp sea salt
  • 1 lb flank steak

Instructions

    Cup of Yum
  1. Place the cilantro, lime juice, oil, garlic, green onions, Serrano chile, and sea salt in a bowl. Blend with an immersion blender or blender until smooth.
  2. Place a flank steak in a large zip-lock bag and pour half of the marinade into the bag. Squish the bag so the marinade has coated the flank steak. Place in the refrigerator and let marinate for 3-4 hours. Reserve the other half of the marinade as a dipping sauce.
  3. Remove the steak from the refrigerator 30 minutes before grilling.
  4. Preheat the grill to medium-high heat. Brush the grill grate with oil. Grill flank steak, covered, for 2-3 minutes per side for medium rare.
  5. If using a grill pan, heat the grill pan over medium-high heat and coat it with cooking spray. Place the flank steak into the pan and cook for 3-4 minutes on the first side, flip and cook for 2-3 minutes on the other side for medium rare.
  6. Transfer to a cutting board and let the meat rest for 5-7 minutes before slicing and serving with reserved sauce. Enjoy.
