Cilantro Lime Rice
This Cilantro Lime Rice recipe is an easy side dish that can go with chicken, pork or beef. Light and refreshing yet super versatile!
Ingredients
- 1 cup long-grain white rice
- 2 cups water cold
- salt to taste
- 1/4 cup cilantro chopped
- 1 whole lime juiced (about 2 tablespoons)
Instructions
- In a small pot, stir the rice, water, and salt together. Cover and bring to boil. Reduce to simmer and cook 15-20 minutes or until rice is completely cooked through. (Once there is no visible water bubbling around the rice anymore- 15 minutes or so- turn the heat off and keep the lid on to steam the rice another 10 minutes until done.)
- Fluff rice with fork and stir in cilantro and lime juice, to taste. Serve hot.
