Cilantro Lime Rice
Easy and simple to make, this cilantro lime rice is an easy way to add flavor to your favorite dishes. Serve it as a side with your favorite Mexican mains or grilled meats for a filling and hearty meal.
Ingredients
- 1 cup long grain white rice
- 1.75 cup water or chicken broth
- 1 Tablespoon butter
- 1 clove garlic minced
- 1 lime 2 tablespoons juice & 1 teaspoon zest, large
- ⅓ cup cilantro finely chopped
- ½ teaspoon salt
Instructions
- Bring water or chicken stock to a boil, add rice, stir, cover, and reduce the heat to low. Simmer for 15 minutes until the water is absorbed and rice is tender.
- Remove the pot from heat (keep it covered) and let it sit for 10 minutes.
- Fluff rice with a fork, add the butter, minced garlic, lime juice, lime zest, chopped cilantro, and salt. Toss everything together and serve immediately!
Notes

- Use fresh lime juice, don't be tempted to use bottled as it won't have the same fresh and zingy flavor.
