Cilantro Lime Rice

Cilantro Lime Rice is a kicked up rice side that pairs well with anything, but especially Mexican or Indian cuisines. Super easy to make!

Ingredients

  • 2 cups basmati rice rinsed
  • 2 cups chicken stock
  • 2 cups water
  • 2 cloves garlic minced
  • 1 lime juiced and zested
  • 1 bunch cilantro finely chopped

Instructions

    Cup of Yum
  1. Add the rice, stock, water and garlic in a large saucepan over medium high heat. Bring to a boil, uncovered.
  2. Turn down the heat, and place a lid on the saucepan and cook for 15 minutes.
  3. When the rice is fully cooked, fold the cilantro in, mix the lime and zest in until well combined.
  4. Devour.
