Cilantro lime shrimp skewers are a quick and easy dinner or appetizer! Shrimp is marinated in a mixture of cilantro, lime juice, honey, and flavorful dried spices, then grilled to perfection.

Ingredients
- 2 tablespoons olive oil
- 2 tablespoons honey
- 1/4 cup cilantro leaves chopped
- zest of a lime
- 2 tablespoons lime juice
- 1/2 teaspoon chili powder
- 1/2 teaspoon ground cumin
- 1/4 teaspoon garlic powder
- 1 1/2 pounds jumbo shrimp 16/21 count, peeled and deveined
Instructions
- Whisk the marinade ingredients in a glass measuring cup or bowl. Put the shrimp in a bowl or freezer bag and pour the marinade over them.
- Stir to coat all of the shrimp in the marinade or massage it in if using a freezer bag. Marinate for 15-30 minutes.
- Thread the shrimp onto metal or wooden skewers. If using wooden skewers make sure to soak them in water for at least 30 minutes. Preheat your grill to 400° F. then clean and oil the grates.
- Place the shrimp skewers onto the grill grates and grill for 2-3 minutes. Flip them over and grill another 2 minutes or until they're pink, opaque, and have a loose C shape.

Notes
- Optional step - After removing the shrimp from the marinade, pour the marinade into a small saucepan or skillet and bring it to a boil. Reduce the heat to medium-low and let it simmer for a couple minutes. Stir the entire time. Brush the glaze onto the grilled shrimp skewers.
