Cinnamon Baked Apples with Walnuts and Spices

The ultimate fall dessert, baked apples are stuffed with walnuts and spices then baked in apple cider until soft and sweet. Serve with vanilla ice cream to make a la mode!

Ingredients

  • 4 apple cored - any type except Grannysmith which do not bake well, large
  • 4 teaspoons butter cut in tiny cubes, unsalted
  • ¼ cup walnuts (chopped)
  • 2 teaspoons cinnamon
  • 1 teaspoon ground ginger
  • ½ teaspoon ground nutmeg
  • brown sugar to taste
  • ½ cup apple cider
  • vanilla ice cream (optional, to serve)

Instructions

  1. Pre-heat oven to 350 degrees.
  2. Core apples with small knife or apple corer and place in large glass baking dish.
  3. In a small bowl, combine butter, walnuts, cinnamon, ginger, nutmeg and sweetener of choice. (Stevia is my calorie free favorite but feel free to use brown sugar if you wish.)
  4. Stuff apples with equal parts of the butter and walnut mixture.
  5. Pour apple cider in the bottom of the pan to prevent burning and place in oven.
  6. Bake for 45-60 minutes or until apples are tender, basting with pan liquid every 15 minutes.
  7. Serve with apple cider cooking liquid drizzled on top. Tastes even better a la mode.
