Ingredients

  • ¼ cup maple syrup
  • 1 tsp chili powder
  • 1 tsp chipotle powder
  • ½ tsp ground cinnamon
  • ¼ tsp kosher salt
  • 1 lb salmon
  • 1-2 lbs sweet potatoes peeled & small dice – optional

Instructions

  1. Preheat the oven to 400°F.
  2. In a small bowl, combine the maple syrup, chili powder, chipotle powder, ground cinnamon and kosher salt.
  3. Place the salmon in a foil basket on a baking sheet, cover with the chipotle cinnamon maple glaze.
  4. Optionally add sweet potatoes around the salmon and drizzle with any additional chipotle cinnamon maple glaze.
  5. Place in the oven for 20-25 minutes.
