Cinnamon Raisin Granola with Coconut Oil

This vegan Cinnamon Raisin Granola with Coconut Oil is made with just 5 ingredients. Delicious and super crunchy, this granola is the perfect breakfast when you haven't gone grocery shopping in a while!

Ingredients

  • 3 cups oats I recommend old-fashioned rolled oats
  • 1 teaspoon ground cinnamon
  • 2 tablespoon coconut oil melted
  • ½ cups maple syrup
  • 1¼ cups raisins

Instructions

  1. Preheat the oven to 300 F and line a large baking sheet with a parchment paper.
  2. In a large bowl, mix oats, coconut oil, cinnamon, maple syrup and raisins.
  3. Spread the granola mixture out onto a baking sheet and bake for 35 minutes, stirring halfway through.
  4. Remove granola from the oven, let it cool and store in the airtight jar.

Notes

  • Maple syrup. If you like to make your cinnamon raisin granola sweeter, you can add ¼ cup more maple syrup.
  • Stirring. If the edges start to brown quickly, take the raisin granola out of the oven and stir, then return and continue baking until it's done.
  • Baking. Don't over-bake! The coconut oil granola will continue to crisp as it cools, so it's okay if it seems soft when it's fresh out of the oven.
