Cinnamon Roll Coffee Cake

Ingredients

For the cake:
  • 3 cups all-purpose flour 390 grams
  • 1/4 teaspoon salt
  • 4 teaspoons baking powder aluminum free, 20 grams
  • 1 1/2 cups 2% milk 12 ounces
  • 1 cup granulated sugar 200 grams
  • 2 large eggs
  • 2 teaspoons vanilla extract 10 grams
  • 1/2 cup salted butter melted, 4 ounces
For the cinnamon swirl:
  • 1 1/4 cups salted butter at room temperature, 10 ounces
  • 1 cup brown sugar 210 grams
  • 2 tablespoons all-purpose flour 15 grams
  • 2 tablespoons cinnamon 16 grams
For the glaze:
  • 2 cups powdered sugar 260 grams
  • 1/3 cup heavy cream 2.5 ounces
  • 1 teaspoon vanilla 5 grams

Instructions

  1. Preheat the oven to 350º Fahrenheit. Grease a 9x13 baking pan with cooking spray.
  2. In a large bowl, mix together the flour, salt, and baking powder.
  3. In another bowl, mix together the milk, sugar, eggs and vanilla.
  4. Add the dry ingredients to the wet ingredient and mix just until combined. Once mixed, slowly pour in the melted butter. Pour into the prepared 9×13 pan.
  5. For the topping, mix all the ingredients together until well combined. The mixture will be thick.
  6. Drop by spoonfuls evenly over the top of the batter. Swirl with a knife.
  7. Bake for 30-40 minutes.
  8. In a small bowl, whisk together the powdered sugar, cream and vanilla until smooth. Drizzle the glaze over the warm cake. Dust the cake with extra cinnamon if you'd like. Serve the cake warm.
