Ingredients

Cinnamon Streusel Topping:
  • 1/2 cup flour
  • 1/4 cup brown sugar , packed
  • 1/2 teaspoon cinnamon
  • 3 tablespoons unsalted butter , cut into small pieces
Peach Bread:
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1 cups sugar
  • 2 teaspoons vanilla extract
  • 2 cups flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 2 teaspoon ground cinnamon
  • 1 teaspoon salt
  • 1 1/2 cups peaches , peeled and chopped

Instructions

Cinnamon Streusel Topping:

  1. In a medium bowl, mix together the flour, brown sugar, and cinnamon, then cut the butter in until it resembles small chunks the size of peas.
  2. Put the mixture in the fridge while you make the bread batter.
Peach Bread:
  1. Preheat the oven to 325 degrees and butter and flour a 9x5 inch loaf pan.
  2. In a large mixing bowl whisk together eggs, oil, sugar, and vanilla extract until well blended.
  3. In a separate bowl sift together the flour, baking powder, baking soda, cinnamon, and salt.
  4. Add flour mixture to the wet ingredients and whisk until just combined.
  5. Fold peaches in by hand until just combined.
  6. Pour batter into the pan and sprinkle cinnamon streusel on top.
  7. Bake for 55-60 minutes until a toothpick comes out clean.
