Ingredients

Banana Bread:
  • 3 banana well-mashed, very ripe
  • ⅓ cup butter melted
  • ¾ cup sugar
  • 1 egg well-beaten
  • 1 tsp vanilla
  • 1½ cups flour
  • 1 tsp baking soda
  • ¼ tsp cinnamon
  • ⅛ tsp cloves ground
  • ⅛ tsp nutmeg
  • Pinch salt
Cinnamon Layer:
  • ⅓ cup sugar
  • 1 tbsp cinnamon

Instructions

  1. Preheat the oven to 350 degrees. Coat a small loaf pan with cooking spray.
  2. Mix the mashed bananas, butter, sugar, egg, and vanilla with a hand mixer until creamy.
  3. Combine the flour, baking soda, cinnamon, cloves, nutmeg, and salt in a separate bowl, then mix well. Gently add the flour mixture to the banana mixture until just combined. Don't overmix.
  4. Mix the ⅓ cup of sugar and 1 tablespoon of cinnamon.
  5. Add half of the batter to the loaf pan and then sprinkle more than half of the cinnamon-sugar mixture all over the batter in the pan.
  6. Add the rest of the batter, and then sprinkle the leftover cinnamon-sugar on top.
  7. Bake for 55-65 minutes, or until a tester inserted into the center comes out clean.
  8. Remove from the oven, then let it cool for a few minutes before transferring to a cooling rack to finish cooling.
  9. Slice and serve with butter if desired. Enjoy.
