This sweet walnut pastry recipe for cinnamon walnut puff pastry rolls is simple and easy to make. We will be using the Scotch method also known as Rough Puff to prepare the puff pastry which is super easy and quick.

Ingredients
- 4 cups flour 480 grams
- 1 1/2 cups milk or water 300 grams
- 1 teaspoon salt 6 grams
- 2 cups unsalted butter (450 grams), cold cut into small cubes
- 2 egg yolks 40 grams
- 3 teaspoons white vinegar 15 grams
- 1 1/2 cups sugar 300 grams
- 6 teaspoon cinnamon powder
- 1 1/2 cups chopped walnuts
Instructions
- Cut butter into the flour. Add egg yolks, milk, and vinegar to the flour mixture and blend well.
- Shape into dough into a ball and refrigerate for 3 hours, or to speed up the process freeze for 30 minutes.
- Combine sugar, walnuts, and cinnamon in a medium-sized bowl and stir together.
- Portion the chilled dough into 6 equal parts. Work with 1 piece at a time, and refrigerate the remaining dough.
- Roll out the dough on a floured surface into a rectangle about 1/2 inch thick.
- Spread 1/2 cup of the walnut mixture over the dough, then starting at the long end, roll up tightly, into a log shape, then slice into 12 1/2-inch slices. They will look like mini cinnamon rolls.
- Place on a greased baking pan and bake at 375°F (190°C) for 20-25 minutes or until golden brown in color.
- Repeat with the remaining dough.
