Ingredients

  • 1 cup brown sugar
  • 1 cup granulated sugar
  • 4 egg
  • 1 cup canola oil
  • 2 cups all-purpose flour
  • 2 teaspoons cinnamon
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 3 ½ cups zucchini freshly grated
  • 1 cup walnuts chopped
Cream Cheese Frosting
  • ¼ cup unsalted butter softened
  • 1 (8-ounce) cream cheese block softened
  • 1 teaspoon vanilla
  • 3 tablespoons heavy whipping cream
  • 1 ¾ cup powdered sugar

Instructions

  1. Preheat oven to 350 degrees Fahrenheit. Lightly spray a 9x13-inch baking dish with nonstick cooking spray.
  2. Using a handheld or stand mixer, whisk the 1 cup brown sugar, 1 cup granulated sugar, 4 eggs, and 1 cup canola oil until light and creamy.
  3. Sift the 2 cups all-purpose flour, 2 teaspoons cinnamon, 1 teaspoon baking soda, ½ teaspoon baking powder, and ½ teaspoon salt together. Add the flour mixture to the sugar mixture and stir until combined.
  4. Stir in the 3 ½ cups freshly grated zucchini and 1 cup chopped walnuts. Pour the batter evenly into the prepared baking dish. Bake for 35-40 minutes until a toothpick inserted comes out clean.
  5. Remove the cake from the oven and let it cool compeltely.
Cream Cheese Frosting
  1. whisk the ¼ cup softened unsalted butter and 1 (8-ounce) block softened cream cheese together until creamy. Add in the 1 teaspoon vanilla and 3 tablespoons heavy whipping cream. Gradually whisk in the 1 ¾ cup powdered sugar until smooth.
  2. Once the cake is cooled, frost it with the cream cheese frosting and serve.
