Citrus Salad with Goat Cheese and Pistachios
This quick and easy Winter citrus salad is topped with goat cheese, pistachios, mint and olive oil. Simple enough for a casual weeknight dinner but elegant enough for entertaining.
Ingredients
- 2 orange any type, ideally seedless
- 2 large grapefruit any type
- ¼ cup pistachio roughly chopped
- 4 ounces goat cheese
- 2 tablespoons mint minced, fresh
- 2 tablespoons extra virgin olive oil
- salt to taste
- black pepper to taste
Instructions
- Using a sharp paring knife, carefully peel the outside of each citrus fruit. Next, thinly slice each and lay on a large platter or plate.
- Crumble goat cheese over the fruit then sprinkle with all remaining ingredients. Season with salt and pepper to taste before serving.
