Clarified Butter Recipe
Clarified butter is made by slowly heating unsalted butter to separate milk solids and water, leaving behind pure butterfat. This clear, golden liquid has a higher smoke point than regular butter, making it suitable for cooking and sautéing. The method involves gentle heat and skimming off froth for clarity.
Ingredients
- 1 pound butter cold, unsalted
Instructions
- Add the 1 pound of butter to a medium-size saucepot and cook over low to medium heat.
- Once the froth begins to rise to the top, use a spoon to remove the froth.
- Continue to do this until no more froth has risen to the top.
- Next, pour the clear butter into a storage container leaving the milky, cloudy liquid at the bottom of the pan.
- Store the clear liquid and discard everything else.
Notes
- Only use unsalted butter for best results and to avoid excess salt in clarified butter.
- Keep heat low to prevent burning and maintain clarity during the melting and skimming process.
- Store clarified butter covered at room temperature up to 7 days, refrigerate up to 14 days, or freeze for 6 months.
- Use clarified butter as a substitute for cooking oils when sautéing or frying for a clean butter flavor and higher smoke point.
- Make clarified butter ahead, up to 5 days before use, for convenience.
