Classic Caesar Salad

Our Caesar Salad has a simple homemade dressing with options for adding chicken as well as making your own croutons. It can't be beat!

Ingredients

Dressing
  • 1/2 cup mayonnaise
  • 1/2 cup extra virgin olive oil
  • 2 tablespoons capers
  • 1/4 cup lemon juice about 1 lemon
  • 2 tablespoons Worcestershire sauce 
  • 1 tablespoon ground mustard
  • 1 tablespoon black pepper
  • 2 tablespoons minced garlic  about 6 cloves
  • 1/2 tablespoon kosher salt
  • 2 ounces anchovies about 5 filets
  • 1/4 cup grated Parmesan cheese
Salad
  • 4 medium romaine hearts chopped
  • 2 cups plain croutons
  • 1/4 cup shaved Parmesan cheese or shredded or grated

Instructions

  1. Make your dressing in a food processor or blender by combining 1/2 cup mayonnaise, 1/2 cup extra virgin olive oil, 2 tablespoons capers, 1/4 cup lemon juice, 2 tablespoons Worcestershire sauce, 1 tablespoon ground mustard, 1 tablespoon black pepper, 2 tablespoons minced garlic, 1/2 tablespoon kosher salt, and 2 ounces anchovies. Blend until smooth.
  2. Stir in 1/4 cup grated parmesan cheese and refrigerate until ready to serve.
  3. Rip or chop 4 medium romaine hearts into bite-sized pieces and place them in a large serving bowl.
  4. When ready to serve, drizzle with half of the dressing and toss to coat. Add in 2 cups plain croutons and toss with the remainder of the dressing. Top with 1/4 cup shaved parmesan cheese, season with freshly ground black pepper to taste, and serve immediately.

Notes

  • Homemade Croutons
  • 2 cups cubed stale bread
  • 1/4 cup extra virgin olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon black pepper
  • 1/2 teaspoon salt
  • Place cubed bread into a large resealable plastic bag along with the olive oil, garlic powder, pepper, and salt. Shake until all the pieces of bread are coated.
  • Spread the bread cubes out evenly on a parchment-lined cooking sheet.
  • Bake at 350 degrees for 15 minutes or until the pieces start to brown. Flip if needed.
