Classic Chicken Salad
This Classic Chicken Salad combines shredded cooked chicken with mayonnaise, crisp diced apples, raisins, and chopped walnuts, all brightened by apple cider vinegar. Ingredients
- 2 pounds chicken shredded, cooked
- ½ cup mayonnaise
- 2 apple your favorite variety, peeled, cored and diced, large
- ⅓ cup raisins
- ⅓ cup walnuts chopped
- 4 tablespoons apple cider vinegar
- salt to taste
- black pepper to taste
Instructions
- Place the chicken in a large bowl and combine with the mayonnaise, stirring well to ensure that all of the chicken has been coated.
- Add the apples, raisins, walnuts and vinegar, and season with salt and pepper, to taste. Toss to thoroughly combine. The chicken salad can be served immediately or stored in an airtight container in the refrigerator for up to 4 days.
Notes
- Refrigerate for at least 1 hour to blend flavors or serve immediately.
- Substitute pears for apples, halved grapes or dried cranberries for raisins, and cashews or pecans for walnuts as desired.
