Ingredients

  • 4 cups chicken breast about 1 pound chicken breast, cooked, shredded
  • 1 cup celery chopped
  • 1 cup red grape , halved
  • ⅓ cup onion red, chopped
  • ¼ cup almonds toasted, sliced
Dressing
  • 1 cup mayonnaise
  • ¼ cup lemon juice fresh
  • 1 teaspoon kosher salt
  • 1 teaspoon black pepper freshly ground

Instructions

  1. To a medium size bowl, add the shredded chicken, chopped celery, grapes, onions, and almonds.
  2. In a small bowl, mix the mayonnaise with the lemon juice and salt and pepper.
  3. Add the mayo mixture to the bowl with the chicken and mix well. Taste for seasoning and adjust to your taste. Serve the chicken salad on croissants or bread, or over salad greens.

Notes

  • Refrigerate the chicken salad for up to 3-4 days to allow flavors to meld.
  • Serve chilled, adjusting seasoning just before serving if necessary.
  • Good for making ahead and packing for lunch sandwiches or salads.
