Classic Creole Tomato Salad
The perfect salad for when creole tomatoes are in season! Paired with a simple dressing the sweet ripe, juicy flavors of the tomatoes will shine through!
Ingredients
- 3 tomato sliced ¼" thick, ripe, creole
- 1 onion thinly sliced, small Vidalia or sweet onion
- ¼ teaspoon salt
- 4 prigs thyme fresh; or lemon thyme
- 3 tablespoons red wine vinaigrette
Instructions
Prepare the salad dressing:
- Click on the red wine vinaigrette link and prepare the salad dressing. Refrigerate for up to a week.
Make the Creole tomato salad:
- Arrange the tomato slices on a platter. Separate the thin onion slices over the tomatoes and lightly sprinkle with salt.
- Remove some of the thyme leaves from the sprigs and sprinkle over the salad. Drizzle it with the red wine vinaigrette and serve at room temperature.
