- 3 ripe creole tomatoes sliced ¼" thick
- 1 small vidalia onion or a sweet onion thinly sliced
- ¼ teaspoon salt
- 4 prigs fresh tyme or lemon tyme
- 3 tablespoons red wine vinaigrette
Instructions
Prepare the salad dressing:
- Click on the red wine vinaigrette link and prepare the salad dressing. Refrigerate for up to a week.

Make the Creole tomato salad:
- Arrange the tomato slices on a platter. Separate the thin onion slices over the tomatoes and lightly sprinkle with salt.
- Remove some of the thyme leaves from the sprigs and sprinkle over the salad. Drizzle it with the red wine vinaigrette and serve at room temperature.
