Classic Shepherd's Salad

This Shepherd's Salad is a beautiful combination of delicious chopped vegetables, feta cheese, and incredible flavors. Quick and easy to make - just chop, toss together, and you’re done!

Ingredients

  • 2 medium tomatoes sliced
  • 1 medium cucumber chopped
  • ½ yellow bell peppers chopped
  • 1 red onion thinly sliced
  • 1 scallion chopped
  • 12 kalamata olives pitted
  • 1 teaspoon dry oregano
  • ¼ teaspoon salt
  • 2 tablespoon olive oil
  • 7 oz feta cheese cut into large chunks

  1. In a medium mixing bowl, combine tomatoes, cucumber, bell pepper, onion, scallion, and Kalamata olives.
  2. Sprinkle with oregano and salt, and drizzle with olive oil.
  3. Mix gently. Top the salad with Feta cheese and serve.

Notes

  • Add Greens: This recipe is a traditional take on shepherd’s salad, but you can always add a bed of lettuce or spinach to the bottom of the plate for a more leafy version of the salad.
  • Add Protein: While this is a classic shepherd's salad, you can always add your favorite protein to make it a complete meal. Grilled chicken, steak, or even chickpeas could be great additions.
  • Making it ahead of time: You can prepare the ingredients for the salad in advance, but it's best to mix them together with the dressing just before serving. This will help to maintain the salad's fresh and crisp texture.
