Classic Wedge Salad

Ingredients

Dressing
  • ½ cup mayonnaise
  • ⅓ cup buttermilk
  • ¼ cup crumbled blue cheese
  • ¼ cup sour cream
  • ¼ cup red wine vinegar
  • 1 ½ tablespoons granulated sugar
  • 1 tablespoon olive oil
Salad
  • 1 head iceberg lettuce cut into 8 wedges
  • 2 ripe tomatoes diced
  • 1 cup cooked and crumbled bacon about 1 pound
  • ½ cup crumbled blue cheese
  • ¼ cup chopped fresh parsley

Instructions

  1. Remove any wilted outer leaves from the head of lettuce. Keep the core intact and slice the lettuce into quarters with a large knife. The core should hold the wedge together.
  2. Run cold water through the wedges, if it's a really tight head of lettuce, separate a little bit as needed so the water can get through. Shake a few times to dry and drain in a strainer while preparing the other ingredients.
  3. Combine dressing ingredients in a bowl; blend using a hand mixer. Taste and add salt and pepper as needed. Chill until ready to serve.
  4. Build the salad by placing 1 lettuce wedge on each plate. Drizzle equal amounts of dressing over each wedge of lettuce.
  5. Scatter tomatoes, bacon, and blue cheese over each salad, and garnish with fresh parsley.

Notes

  • Blue Cheese Dressing can be replaced with homemade ranch.
  • If time allows, wash the wedges a few hours ahead of time (or up to 24 hours in advance) and refrigerate to make it extra crispy.
  • Optional Topping Ideas:
  • Veggies: Tomatoes, diced cucumbers, radish, green or red onions, avocado
  • Bold Flavors: Bacon crumbles, blue cheese crumbles, feta cheese
  • Other: Fresh herbs like chives or dill, black pepper, boiled eggs
