Cobb Salad

Cobb Salad made with romaine lettuce, crispy bacon, creamy avocado, juicy tomato, egg, Monterey Jack cheese, tossed in homemade Ranch dressing.

Ingredients

  • 1 head romaine lettuce (chopped or 3 romaine hearts chopped)
  • 8 Slices Bacon (cooked until crispy and cut into bite-size pieces)
  • 4-6 large hard boiled eggs (sliced in half or chopped)
  • 1 1/2 cups grape tomatoes (sliced in half)
  • 1 large avocado (may sprinkle with lemon juice to avoid browning)
  • 1 1/2 cups Monterey Jack Cheese, Blue Cheese, or Feta Cheese
  • homemade ranch dressing

Instructions

  1. Cook bacon according to package instructions. This can be done in a skillet or in the oven at 400 degrees for 15-20 minutes. Set aside and let drain on paper towel-lined plate. Cut into bite-size pieces. 
  2. Slice the tomatoes in half lengthwise. Sprinkle with a touch of salt. Dice avocado into small pieces. May want to sprinkle lemon juice on avocado to avoid browning. 
  3. Chop the lettuce into small bite-size pieces. Top with bacon, hard boiled eggs, tomatoes, avocado, and cheese. 
  4. When ready to serve, toss with ranch dressing. Serve immediately.
