Cobb Salad

This Cobb Salad is a delicious blend of veggies, bacon, avocado, eggs, honey mustard dressing, and tender and juicy slices of chicken.

Ingredients

For the salad:
  • 4 cups romaine lettuce chopped or preferred mix of greens
  • 2 cups chicken cooked, sliced or diced*
  • 6 pieces Bacon cooked and diced
  • 4 egg boiled, peeled and sliced
  • 1 large avocado pitted and sliced or diced
  • 1 cup cherry tomato halved
  • ¼ cup red onion sliced
For the dressing:
  • ⅓ cup honey
  • ¼ cup Dijon mustard and 1 Tbsp
  • 3 Tbsp olive oil
  • 3 Tbsp apple cider vinegar
  • ½ tsp garlic powder
  • ½ tsp salt kosher
  • ¼ tsp black pepper ground

Instructions

  1. Add all dressing ingredients into a small mixing bowl to whisk together or into a mason jar to shake until combined. Adjust salt and pepper to taste. Set aside.
  2. Prepare your salad ingredients, slice the chicken, peel and slice the eggs, and wash and dice your produce.
  3. Place your lettuce into the bottom of your serving bowl, and top the lettuce with your sliced salad ingredients. Pour the dressing over the salad and gently toss to evenly coat. Serve immediately, and enjoy!

Notes

  • *Any grilled or cooked chicken works well for this recipe, leftover shredded rotisserie chicken is a great option too!
  • Store leftovers in an airtight container for up to 3-5 days.
  • Try adding a few tablespoons of mayonnaise to the dressing for a richer, creamier version, or non-fat Greek yogurt for a healthy and creamy option!
  • Dressing can be made a day ahead. This dressing also makes an excellent marinade for chicken and pork.
