Ingredients

  • 5 lices Bacon cooked and crumbled
  • 3 egg hard-boiled and chopped, large
  • 1 romaine lettuce chopped, head
  • 2 cups chicken breast diced, cooked
  • 2 tomato seeded and chopped, medium
  • 2/3 cup blue cheese crumbled
  • 1/4 cup chives chopped
  • 1 avocado peeled, pitted, and diced, large
  • 4 tablespoons red wine vinegar
  • 1 tablespoon Dijon mustard
  • 2 teaspoons honey
  • 1/2 cup extra-virgin olive oil
  • salt to taste
  • black pepper to taste

Instructions

  1. On a large platter, arrange chopped lettuce. Top with rows of bacon, eggs, chicken, tomatoes, blue cheese, chives, and avocado.
  2. In a jar, combine red wine vinegar, Dijon mustard, honey, and olive oil. Season with salt and pepper, shake well to emulsify.
  3. Drizzle dressing over the salad just before serving.
