Ingredients

Cobb Salad
  • 4 cups romaine lettuce chopped
  • ½ cup cherry tomato halved
  • 1 avocado sliced
  • 6 oz chicken breast cooked and sliced, boneless
  • 4 lices Bacon cooked and crumbled
  • 4 oz Roquefort cheese omit for Paleo, crumbled
  • 2 egg quartered, hard-boiled
  • chives for garnish, chopped fresh
Honey Dijon Vinaigrette
  • ¼ cup olive oil
  • 3 Tablespoon white wine vinegar
  • 2 Tablespoon Dijon mustard
  • 2 teaspoon honey (use sugar alternative on low-carb diet)
  • 1 teaspoon oregano
  • salt to taste
  • black pepper to taste

Instructions

  1. Arrange chopped lettuce in a salad bowl or a plate.
  2. Layer the chopped tomatoes, avocado, chicken, bacon, and hard-boiled eggs in rows.
  3. Sprinkle some fresh chopped chives and drizzle the Honey Dijon vinaigrette on top.

  1. Combine all ingredients in a small bowl and whisk until well blended.
