Coca Cola Brownie Sundae

Deliciously fudgy brownies made with Coca Cola, topped with a generous scoop of vanilla bean ice cream, and drizzled with a coca cola chocolate sauce!

Ingredients

  • 1 box of fudge brownie mix I used Duncan Hines
  • 2 Tbsp vegetable oil
  • 1 egg
  • 1/2 cup coca cola
  • cup scant 1/2 buttermilk
  • Coca Cola Chocolate Sauce:
  • 1/2 cup coca cola
  • cup ¼ cocoa powder
  • cup ¼ light corn syrup
  • cup ⅓ semi-sweet chocolate chips

  1. Preheat oven to 350 degrees. Grease a 9x13" baking pan and set aside.
  2. To the bowl of a stand mixer, add the brownie mix, vegetable oil, egg, coca cola and buttermilk. Using the paddle attachment, beat until thoroughly combined.
  3. Pour batter into prepared baking pan and bake for 25 minutes, or until set and a toothpick inserted into the middle comes out clean.
  4. Cool brownies on a cooling rack, in the pan, completely.
  5. Coca Cola Chocolate Sauce:
  6. Combine coca cola, cocoa powder and corn syrup in a small saucepan. Over medium heat, whisk and bring to a slight boil. Once it boils, reduce heat and simmer on low for 3 minutes.
  7. Remove from heat and stir in chocolate chips.

Notes

  • ** Can also be done using a hand mixer, or even by hand with a whisk.** Serve brownies by themselves, drizzled with chocolate sauce, or combined with ice cream to make a sundae.
