Ingredients

Coke Cake
  • 2 cups granulated sugar
  • 2 cups all-purpose flour
  • 1 can (12 ounces Coca-Cola; use regular, not Diet or Coke Zero)
  • ½ cup butter unsalted
  • ½ cup canola oil or vegetable oil
  • ¼ cup unsweetened cocoa powder natural
  • 1 teaspoon baking soda
  • ½ cup buttermilk
  • 2 egg large
  • 1 teaspoon vanilla extract
Coke Frosting
  • 1 can (12 ounces Coca-Cola)
  • ½ cup butter cubed, unsalted
  • ¼ cup unsweetened cocoa powder natural
  • 4 cups confectioners' sugar this is 1 pound confectioners' sugar if buying it by the box or bag, sifted

Instructions

  1. Preheat oven to 350F, line a 9×13 pan with aluminum foil for easier cleanup, and spray with cooking spray; set aside.
  2. To a large bowl add the sugar, flour, and whisk to combine; set aside.
  3. To a medium, high-sided saucepan, add the butter, oil, cocoa powder, Coca-Cola, and bring to a boil over medium-high heat; whisk nearly continuously.
  4. Once boiling, pour liquid over the dry ingredients and whisk to combine; set aside.
  5. Dissolve baking soda in buttermilk just before adding to the batter and whisk to combine.
  6. Add the eggs, vanilla extract, and whisk to combine.
  7. Turn batter out into prepared pan and bake about 35 to 40 minutes, or until done. A toothpick should come out clean or with a few moist crumbs but no batter.
  8. In the last 15 minutes or so of baking, make the frosting.
Frosting
  1. In a small, high-sided saucepan bring the Coca-Cola to a boil over high heat and cook 12 to 15 minutes or until liquid is reduced to 1/2 cup.
  2. While Coke cooks, sift the confectioners’ sugar over a large bowl; set aside.
  3. After the Coke has reduced, turn the heat to medium, and add the butter, cocoa, and whisk constantly until butter has melted.
  4. Add the Coke and butter mixture to the confectioners’ sugar and whisk until smooth. *
  5. Pour the frosting immediately over the warm cake. Allow frosting to set up before slicing and serving.

Notes

  • If frosting is too thick, add a small amount of fresh Coca-Cola to adjust to a spreadable consistency.
  • Store the cake airtight at room temperature or in the refrigerator for up to 5 days; refrigeration may cause faster drying.
