Coca Cola Cake with Cake Mix

Coca Cola Cake is a chocolate cake made by replacing the water in a box cake mix with Coca-Cola, creating a moist crumb with a slight caramel note. The cake is topped warm with a glossy Coca Cola frosting made from butter, cocoa powder, Coca-Cola, confectioners sugar, vanilla, and pecans. The frosting sets into a firm, sweet shell adding texture and a rich cocoa flavor with nutty crunch from pecans.

Ingredients

For the Cake:
  • 1 (15.25 ounce) chocolate cake mix plus ingredients called for on the box, box, or Devil's Food cake mix
  • 1 cup Coca-Cola or enough to replace the water called for on the package directions
For the Coca Cola Frosting:
  • ½ cup butter salted, 1 stick
  • 3 tablespoons cocoa powder unsweetened
  • 6 tablespoons Coca-Cola
  • 1 (16 ounce) confectioners sugar sifted, box
  • 1 teaspoon vanilla extract
  • ½ cup pecan finely chopped

Instructions

Bake the Cake
    Cup of Yum
  1. Bake the cake in a 9 x 13-inch pan according to package directions, BUT replace the water with an equal amount of Coca Cola.
  2. While the cake is still warm, prepare the Coca Cola Frosting.
Make the Coca Cola Frosting
  1. In a large saucepan, bring butter, cocoa powder, and Coca Cola to a boil, whisking regularly. Remove from heat and mix in powdered sugar and vanilla until smooth. Fold in the pecans.
Ice the Cake
  1. Pour the hot icing over the warm cake. The icing will firm up and harden into a sweet shell over the cake as it cools.

Notes

  • Check cake mix package instructions to ensure correct ingredients are used due to brand differences.
  • Pour the Coca Cola frosting on the cake while warm to allow proper hardening.
  • Allow cake to cool completely before slicing to let icing set fully.
  • Recipe has not been tested with Diet Coke; flavor may differ.
  • Root beer can be substituted for Coca-Cola for a different flavor.
  • Serve with vanilla ice cream and chocolate sauce to enhance the dessert experience.
