Coco Cookies

Ingredients

  • 2 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup butter unsalted, softened
  • 3/4 cup sugar
  • 3/4 cup brown sugar
  • 2 large egg room temperature
  • 1 1/2 teaspoons vanilla
  • 2 cups quick oats
  • 1 1/2 cups chocolate chips
  • nonstick cooking spray or butter to grease the baking sheets

Instructions

  1. In a medium mixing bowl, sift together the flour, baking soda, baking powder, and salt. 
  2. In a large mixing bowl, beat the butter and sugar together till light and creamy.
  3. Beat in the eggs and vanilla.
  4. Use a wooden spoon or spatula to stir in the sifted flour mixture, then stir in the oats and chocolate chips till just combined. Do not overmix.Place cookie dough into the refrigerator and let it chill for about 45 minutes.
  5. Preheat oven to 350 degrees F. Grease baking sheets with butter or nonstick cooking spray.Drop the chilled dough in 2 tbsp balls onto the greased cookie sheets, making sure to space them 1 1/2 - 2 inches apart so they have room to spread. I like to use a small ice cream scoop for this step-- mine holds just about 2 tbsp of dough. I put 12 cookies per standard baking sheet (3 rows of 4 cookies).
  6. Place the cookies in the oven and let them bake for 14-17 minutes till the edges turn golden brown. Remove from the oven. Let the cookies cool on the sheet for 5 minutes. Use a spatula to remove the cookies and place them on a wire rack to cool completely. When baking sheets are cool, make a second batch.
  7. Serve with an ice cold glass of milk... and get happy. :)

Notes

  • You will also need: 2 baking sheets, sifter, medium and large mixing bowls, wooden spoon or spatula, small ice cream scoop (optional)
