Coconut Almond Energy Bites

Ingredients

  • 2 cups old fashioned oats
  • 1/3 cup coconut oil, melted
  • 1/3 cup honey
  • 1/2 cup almond butter (I used maple almond butter)
  • 1 cup flaked coconut
  • 1/2 cup chocolate chips
  • 1/4 cup ground flaxseed
  • 1 teaspoon vanilla extract

Instructions

    Cup of Yum
  1. Combine all ingredients together in a large mixing bowl. Mix until well coated.
  2. Transfer bowl to the freezer for 15 minutes. Remove and roll into balls, about 1/8 cup each. You will need to pack the ingredients together well in your hands before you shape it into balls.
  3. Place balls in an airtight container and store in the refrigerator. Enjoy!
