Ingredients

  • 1 cup dried apricot
  • 10 Medjool dates pitted
  • 1 cup rolled oats
  • 1 cup desiccated coconut divided
  • 1/4 cup chia seeds
  • 1 tablespoon ginger finely grated, fresh

Instructions

    Cup of Yum
  1. Place the apricots, dates, and rolled oats into a food processor and pulse until combined.
  2. Add half the coconut, chia seeds, and grated ginger into the food processor and blend until the mixture comes together.
  3. Scoop out about 2 tablespoons of the mix and squeeze it together to form a ball. Repeat with the rest of the mix.
  4. Roll the balls in the remaining shredded coconut and keep them in an airtight container.
