Ingredients
- 1 cup dried apricots
- 10 Medjool dates pitted
- 1 cup rolled oats
- 1 cup desiccated coconut divided
- 1/4 cup chia seeds
- 1 tablespoon fresh ginger finely grated
Instructions
- Place the apricots, dates, and rolled oats into a food processor and pulse until combined.
- Add half the coconut, chia seeds, and grated ginger into the food processor and blend until the mixture comes together.
- Scoop out about 2 tablespoons of the mix and squeeze it together to form a ball. Repeat with the rest of the mix.
- Roll the balls in the remaining shredded coconut and keep them in an airtight container.
