Coconut Banana Bread

Coconut Banana Bread is a sweet and moist banana bread full of tropical flavor!

Ingredients

  • 1/2 cup butter salted, softened
  • 3/4 cup granulated sugar
  • 2 large egg beaten
  • 3 medium banana ripe, mashed
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon coconut extract (optional, but highly recommended)
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup coconut sweetened shredded

Instructions

  1. Preheat oven to 350 degrees F. Grease the inside of a 9x5-inch loaf pan with non-stick spray. Set aside.
  2. In the bowl of a stand-mixer, cream the softened butter and sugar together until fluffy (about 2 to 3 minutes).Add the eggs, mix until combined. Add the mashed bananas, vanilla extract and coconut extract. Mix until just combined.
  3. In a separate medium bowl, combine the flour, baking powder, baking soda, salt and shredded coconut. Whisk to combine.Slowly add the dry ingredients into the wet ingredients, mixing only until just combined. Don't over mix.
  4. Pour batter into the prepared pan, spreading out evenly.Bake in preheated oven for 50 to 55 minutes, or until a toothpick inserted in center comes out clean. Remove from oven.Let bread cool in pan for 10 minutes, then carefully remove bread from pan and transfer to a wire rack to finish cooling. Once cooled, slice and serve. Enjoy!
