Coconut Cherry Popsicles with Dark Chocolate and Crushed Almonds
Coconut cherry popsicles are a great way to use up the season’s bounty. These frozen treats are creamy, flavourful and drizzled with dark chocolate then sprinkled with crushed almonds.

Ingredients
- 250 g cherries
- 200 ml coconut milk (half a 400ml/15oz can)
- 100 ml milk
- 2 tablespoon maple syrup
- ½ teaspoon almond extract optional
To serve
- 100 g dark chocolate , chopped
- 50 g mixed nuts finely chopped
Instructions
- Remove the cherry pits with a knife or cherry pitter.
- In a blender or food processor, blitz the cherries, coconut milk, milk and almond extract until completely smooth. Pour into ice lolly moulds and freeze until solid.
- To serve, melt the chocolate and set aside. Remove the cherry popsicles from the mould and drizzle the tips with the melted chocolate, then sprinkle with the chopped almonds. Enjoy!
